
Fellow Bloggers I need your help! We have an abundance of Sugar Pumpkins....I am not complaining, but I am out of ideas. I have canned up 15 quarts of pumpkin which will make 30 pies. I still have a wagon full of pumpkins sitting in my dining room. I love pumpkin cream cheese muffins, pumpkin bread, pie, and just baking and eating pumpkin. Can you give me any other ideas for using pumpkin? I would love a pumpkin coffee cake recipe or anything else you can come up with. In fact lets make this a pumpkin recipe exchange.... Leave your recipe in the comments below!
Baked Pumpkin
Cut the top off a pumpkin and scrape out the seeds. Fill cavity with quartered apples, a bit of butter, brown sugar, salt, pepper, and cinnamon. Replace top. Place filled pumpkin in baking dish and bake at 375 for an hour. Your house will smell great and there will be arm wrestling competitions for every last bit of it!

Pumpkin cookies! I thought they sounded odd at first but tried them last fall and they were a hit! I'll dig up the recipe for you!
And... what is the difference between sugar pumpkins and pie pumpkins? I've never noticed sugar pumpkins before.

I really don't think there is much of a difference. They are not the super huge pumpkins...not made for face cutting and such. I know some consider Halloween pumpkins to be pie pumpkins but they really are not. Our average 8 to 10 inches around with about an inch and a half of flesh inside. wow, all that sounds SO delish!! I don't have any recipes for ideas for you...but I did think I'd suggest; Just can it & send me your extra...hehehe!!
Chocolate Chip Pumpkin Muffins
1 1/2 c flour
2 eggs, beaten
1 c sugar
1 c pumpkin
1 tsp baking soda
1/2 c butter, melted
1 tsp cinnamon
1 c chocolate chips
1/2 tsp ground cloves
1/4 tsp allspice
1/4 tsp salt
Mix dry ingredients and set aside. In large bowl beat eggs. Stir in pumpkin, melted butter and chocolate chips. Slowly add dry ingredients. Spoon into greased muffin pan. Bake at 400* for 15-18 minutes.
Pumpkin pancakes, pumpkin scones....

I made a squash soup out of Morris's hubbards using a butternut recipe from Betty Crocker and it was awesome!!!!
Most all winter squash are pretty much the same, just a bit different flavors. So I would guess that you could substitute pumpkin in place of any of them. Pumpkin may be enough different texture that you couldn't make sweet potato fries; but then an again I haven't tried!

Dinner in a pumpkin:
1 lb of ground beef
1 lb. of italian sausage
1 onion, diced
brown together and drain. Mix with:
2 cups cooked rice
1/2 cup soy sauce
1/4 cup brown sugar
1 small can of mushrooms drained and diced
1 can water chestnuts, drained
1 can cream of mushroom soup
mix all together and put into a med. pumpkin..having cleaned it out and washed it.
Set pumpkin in oven safe dish and bake, with pumpkin top on pumpkin, at 350 for 1 to 1.5 hours.
Serve in pumpkin. dish out pumpkin as part of meal. add butter, salt and pepper to pumpkin. (or maple syrup)
This is one the kids used to do with me and I'm getting ready to do it with my class.
