Homemade Chocolate Syrup....

Now I will admit, chocolate isn't my preferred vice, but sometimes I do crave it! Recently that craving has been for chocolate syrup. (Blame the pregnancy hormones!) I can not stand the stuff that you buy in stores. Not only is it artificially flavored, but you can't pronounce half the ingredients. So this craving caused me to search for a homemade version. After looking at several recipes I found one I liked, but still had to change it to suit my tastes. Most versions came out pretty watery or runny. I like a mix between syrup and hot fudge consistency. So here it is my version of Homemade Chocolate Syrup.
Homemade Chocolate Syrup
½ cup cocoa powder
1 cup water
2 cups sugar
1-2 teaspoons cornstarch
⅛ teaspoon salt
¼ teaspoon vanilla
Mix the cocoa powder, sugar, cornstarch and the water in a saucepan. Heat and stir to dissolve the cocoa and sugar. Boil for 3 minutes over medium heat. Be careful not to let it get too hot and boil over! (Boil over it will! Don't turn your back for a second!!!) Add the salt and the vanilla. Let cool. Pour into a clean glass jar, and store in the refrigerator. Keeps for several months, but will most likely be devoured before then. Yields a bit more than two cups.

Serve over any ice cream....especially the Homemade kind.
